Lyonnaised Carrots
Simple and delicious carrots, perfect for the holidays!

  1. Peel carrots and then chop them into slices.
  2. Put carrots in a large pot. Cover with water and bring to a boil. Boil until carrots are soft and can easily be cut with a fork (about 20 minutes).
  3. When the carrots are done, drain the water. Return the carrots to the pot or to a large bowl. Mash carrots until they are in thick chunks, but not mashed like mashed baby food.
  4. While carrots are boiling, slice 1-2 bushels of green onion.
  5. In a large pan, melt the 1/2 cup butter. Lightly saute the green onion in butter.
  6. Add the mashed carrots into the green onion mixture. Stir and heat all the way through.
  7. Add salt and pepper to taste.
